Our rosé wine reinterprets the tradition of the Tuscan peasants who made this wine as an everyday drink: they would take the must still fermenting after a few hours of contact with the skins and make it into a separate container. This was used to concentrate the mass of the main wine that finished its fermentation and then aged in wood to become “the wine of the holidays,” but also to produce the one to drink on hot days, which in any case did not have to be trivial or waste but only fresher and easier to drink.
